BUR - Day 2: Ultimate Reset







Day 2, not a good day. Light headed, not sure if it was from watching too much movies with caption - the text kept drawing my eyes to read - for sure not from the detox, because I still pretty much ate my normal food, if not eating better. I took Body Flow class that night, but very unproductive. Slight headache every time I change elevation. Mediation was spent holding my eyes. Suffice to say, I looked forward to end of the day and to sleep. Oh, on a good note, I drank 60+ oz of water ^_^

Breakfast: Soft boiled eggs
Lunch: Quinoa with chicken, shitake mushroom and kale stir fry
Snack: Greek Yogurt with strawberries, almonds and flaxseed
Dinner: Green salad with tofu and strawberries

BUR - Day 1: Starting the Ultimate Reset



I totally regretting my indulgences yesterday.... I was feeling nauseous, bloated and had trouble sleeping last night. I felt constipated and had to drink Miralax before I went to bed. Even waking up in the morning was tough. Ugh... Note to self: no more.

I was woken up by the urge to go pee, took that chance to drink some of the Mineralize water and popped the first 2 Optimize. Then fell back to sleep again for another hour or so before I kicked myself out of bed.

Still feeling bloated and backed up from the previous indulgence day (bad decision, yes, I know), I kept sipping my Mineralized water. By lunch, I was feeling better. I had Quinoa broth bowl with Chinese Herbal Chicken broth and salad on the side.

My challenge was drinking water. Not used to not working out, I couldn't swallow water without feeling extremely bloated in my stomach. Perhaps my body is not used to the level of hydration it supposed to have. Yes, I kept going to the bathroom every hour. :)  At the end of the day, my water intake is about 50-60 oz, excluding soupy lunch I had. 

We'll see how I feel on the second day.



Breakfast: Oatmeal with strawberries, coconut sugar, almonds and flaxseed.

Lunch: Quinoa in Chinese Herbal Chicken broth.

 
Dinner: Green salad with tofu and radish. Drizzled with balsamic vinegar and Himalayan Salt.

BUR - Day 0: The Preparation

I have done this before so I pretty much know what to expect. I got my supplements ready, planning the food in my head, the fridge and pantry are set.  I'm actually excited about the possibility of food I will make during this cleansing.  So tonight I am going to take it easy. Going to bed early, separating my supplements for the week and already thinking about breakfast.


Tonight's prep: 
Have a bottle of water with MINERALIZE ready on the bedside along with a stash of OPTIMIZE to start me right in the morning:
  • 20oz water + 20 shakes of Mineralize
  • A small bottle of 7 day supply of Optimize
My resolution for this round of Reset is to record my day to day experience on a short < 1min video. Hm... we shall see how it turns out :)

Quinoa Parmesan Crisps




I love how easy it is to make, and even easier to customize the recipe for different preferences. For example,  adding bacon bits for a little bits of fun in the bites, or how about changing the spices to Southwestern mix and add in strained black beans and corn while replacing green bell pepper to red? Sounds confusing? It won't be once you tried the original recipe. So here goes:


Quinoa Parmesan Crisps


1 cup cooked quinoa (cooled)
1/4 cup all purpose flour
1/2 cup grated Parmesan
1/4 cup onions - chopped really small
1/4 cup bell pepper - chopped really small
1/2 cup green onions (or parsley) - chopped thin
1 egg and 1 egg white
1 tsp garlic powder
1/2 tsp thyme
1/2 tsp nutmeg
1/2 tsp baking powder
1/4 tsp sea salt
1/4 tsp black pepper






Whisk all ingredients together then divide the mixture into balls about golf ball size. 




Flatten the balls loosely so they cook faster.  



Pour a bit of olive oil to the pan, just enough to cover the bottom. 


 

On high medium heat, pan fry the mixture until golden brown, flipping once each side. 


Set to cool on paper towel to absorb excess oil and enjoy!

Citrusy Quinoa Salad with Beets and Pecans



I got the idea from the quinoa salad at Menducino Farms. The result is close enough :)  I simplify the ingredients with what I readily have at home.  I didn't mix in the arugula, so I can store it longer in the fridge, and just adding the greens upon serving - in my case, most likely be spinach. Again, readily available at home. I didn't add raisins in my first batch to cut back on the sweetness (which I think already enough), also considering I am doing food prep for 21 Day Fix Challenge. What's nice about having raisins in the salad is the added texture and burst of flavor. So if you are serving this in a party, then by all means, add in the raisins and the arugula.

Citrusy Quinoa Salad with Beets and Pecans


3 cups cooked quinoa
2 small (or 1 medium) beets boiled and cut to small cubes
1 large orange, skinned and cut to small cubes
1 large apple, cored and cut to small cubes - for color, I use green golden delicious
1 cup chopped pecans (or almonds)
1 large lemon juice
3 tbs balsamic vinegar (or to taste)
Pinch of seasalt or himalayan salt

Optional: fresh basil leaves chopped small
Optional: 1/2 cup raisins
Optional: a handful of arugula

All cooked ingredients should be cold or at least room temperature before tossing them together.
Serve over salad (arugula or herby salad is best) or as sides to your protein.
Enjoy!


Notes: Changing the Apple to other fruits, like peach or nectarine, will create a different refreshing experience. EXPERIMENT and tell me how yours turn out :)



 
Fluff the quinoa and let it cool.

 
Boil the beets, and let it cool before cutting.

Mix all of the ingredients and toss.
